Cook It : Hainanese Chicken Rice

In case you didn’t know, I’ve decided to inject more lifestyle posts into the good old blog.  Welcome to my first foodie post on this blog – this is Hainanese Chicken Rice – and I COOKED THIS from scratch!!

Fun fact :  I used to have a food blog called I Love Food Porn (original huh!) before I realised that I sucked at it because a) I like to eat my food IMMEDIATELY so snapping pics at all different angles made my food go lukewarm which I HATE and b) I was not very good at describing food – it was either “Yummy” or “Yukky”.

Now I must confess right now that I am no domestic goddess.  Hell no!  I DO NOT belong in the kitchen.  My Husband is a way better cook than me AND he does ALL the housework.  (Did I marry a maid???)  But for some bizarre reason, during my pregnancy, I had this urge to cook and bake lots – apparently it’s a phenomenon called “nesting”.

Basically, what I am trying to say is that – If I can cook Hainanese Chicken Rice, ANYONE CAN!!!

There were quite a few steps in the recipe and I had to get down and dirty with some chicken legs (oo-er!) plus there was lots of chopping…

But I had an extremely happy Hubby with a full tummy after all the effort.  He gave TWO BIG THUMBS UP for this Hainanese Chicken Rice!  He also loved the fried chicken fat slash skin as it had yummy crunchy bits.

To get a big fat cheesy smile from MY COOKING was a great compliment for me!

The recipe I used was adapted (by adapted, I mean SIMPLIFIED and CUT CORNERS because I am time poor (read : too lazy)) from Adam Liaw’s Hainanese Chicken Rice.  I adapted it by using Chicken Marylands instead of a whole chicken and I got bored before I managed to make the chilli sauce so I just sprinkled red chillies on top of the chicken as garnish, haha!!!  The chicken rice was YUMMY (I told you I wasn’t a food blogger!) and full of chicken-y flavour (with no MSG) and the chicken meat was succulent and moist.  But yeah, it needed a chilli sauce kick so next time, I will just buy ready-made chilli sauce to go with it :P

    I have my cut-down modified version too! Your cut-down version looks so much better and more presentable. I fail at food / cooking blogging because all I want to do is eat when the food is ready. I also can’t be bother making them look good because in the end they’ll end up in my tummy! It’s so much trouble trying to photo-shoot while preparing etc etc. I’ve been trying to ‘recruit’ hubby as my photographer. He said he’ll do it but he always have excuses /death stare at him!
